To get started with this recipe, we have to first prepare a few ingredients. You can have chicken korma using 21 ingredients and 6 steps. Here is how you cook it.
The ingredients needed to make Chicken Korma:
- Take 1/2 kg chicken
- Get 2 tbsp curd
- Prepare 1 cup Barista (fried onion)
- Make ready 3 tbsp ghee
- Make ready 8-10 cashews/kaju
- Take to taste Salt
- Get 2 tsp sugar
- Get 1 cinnamon stick
- Get 2 green cardomom
- Prepare 2 tsp Chopped coriander (optional)
- Take as needed hot water
- Get For chicken marination
- Prepare 1 tsp turmeric powder
- Get 1 tsp red chilli powder
- Prepare 1 tsp salt
- Take 1 tbsp ghee
- Prepare 1 tsp cumin powder
- Make ready 1 tsp coriander powder
- Prepare 2 tbsp ginger garlic paste
- Prepare 1 tsp garam masala powder
- Prepare 2 tbsp curd
Steps to make Chicken Korma:
- Firstly we will marinate the chicken for half an hour. For this take a bowl, add chicken pieces to it. Then add all the marinated masalas, mentioned above along with ghee and curd. Massage the masalas well with the chicken. Cover it and keep it in the refrigerator for about half an hour, to rest.
- Now for making barista, we need one medium onion, sliced. Then to it add a pinch of salt and 1 tbsp of cournflour, mix it well and deep-fry the onion, till it's golden brown in colour, as shown in the image below. If you have readymade barista you can use a cup of it. Now keep this aside.
- Soak the cashews in hot water for about half an hour. Now take a mixing jar, add barista, cashews, curd and grind it into a fine paste, as shown in the image below. Keep this mixture aside.
- Now take a kadhai. Add 3 tbsp of ghee in it. Heat it. Now add green cardomom & cinammon stick. Let them turn golden brown, then add marinated chicken pieces to it. Now cover it & cook it on a low flame for about 15 mins. Here adding potatoes is optional. You can skip that.
- After 15 mins add the onion and cashew mixture to it. Give everything a good mix. Then cover it and cook it for 7 mins more. Then add half a cup of hot water. Add sugar and check salt at this point of time. Mix it once and cover it and cook it for 20 mins more on a low flame.
- After 20 mins. add some chopped coriander leaves and serve it hot with rice, naan or tandoori roti.
