The ingredients needed to make Chicken Kali Mirch:
- Make ready 250 gms chicken on bones
- Take 1/4 cup cashew nuts
- Take 1 cup yogurt
- Take 1 large onion cubed
- Take 1 cinnamon stick
- Prepare 2-3 green cardamoms
- Make ready 1 black cardamom
- Take 1 tsp whole black peppercorns
- Take 1 Tbsp ginger-garlic paste
- Get 1 Tbsp green chilli paste
- Make ready 1 Tbsp ghee plus
- Take 2 Tbsp oil
- Prepare 2 Tbsp black pepper powder
- Make ready 1/2 tsp turmeric powder
- Prepare 1 tsp red chilli powder
- Get 1 tsp coriander powder
- Prepare 1/2 tsp kasuri Methi powder
- Take 1 Tbsp Kitchen King Masala
- Prepare 1 lime juice
- Get 1/4 cup cream
- Prepare as per taste Salt
- Get For garnish -
- Make ready as requried coriander leaves
Steps to make Chicken Kali Mirch:
- In a bowl add cubed onions, 1 cinnamon stick, 1 black cardamom, 2-3 cloves, 1 green cardamom, 3-4 black peppercorns and 1 cup water. Boil the onions for 4-5 mins. The whole spices would help to ease off the onion smell. Wash the chicken pieces.
- To the washed chicken add ginger-garlic paste, lime juice, salt, green chili paste, 1 Tbsp black pepper powder. Mix well to marinate for 15 mins.
- After cooling the boiled onions in a blender add the boiled onions discarding the whole spices and add little water to make a smooth purée.
- In a wok heat ghee and oil and add whole spices of cardamoms, cinnamon stick, black peppercorns, cloves. Add the onion purée and cook until oil doesn’t surface. Whisk yogurt and add to the onion masala. Keep stirring continually otherwise the yogurt will curdle.
- Add ginger-garlic paste, green chili paste. Mix well and continue cooking.
- The onion purée will change its color as it’s been cooked and oil surfaces.
- Add the chicken with its marination masala and keep stirring. At this stage add beaten yogurt and keep stirring so that yoghurt doesn’t curdle. This has to be cooked on medium-low flame until the chicken is well half-cooked. At this stage add cashew paste (boil cashew nuts and add to a blender to make a smooth paste). Add water to cashew paste otherwise there would be lumps. Continue stirring. Otherwise cashew paste will burn beneath the surface.
- At this stage add 1 tsp Kasuri Methi powder, black pepper powder, and Kitchen King masala. Keep stirring. Add salt and continue stirring. Add cream and stir one final time. Set aside.
- Plate and garnish with coriander leaves and enjoy with Lachha Paratha.
