- Cut into thin slices and serve with the gravy.
Sprinkle the pork all over with kosher salt and freshly ground black pepper. Drizzle with olive oil and rub it all into the pork. Place the pork on the rack, skin-side up. When the pork is cooked, transfer it to a carving board. Scoop up the apple and onion with a large spoon and place in a warmed serving bowl.
