In this video I attempt to make a Japanese style Tantanmen (担々麺). This dish probably came to Japan as the Chinese Dandan noodle but was evolved into a spicy.

  23. Get Chili oil, as desired

For this tantanmen ramen, you need the same stock base as for miso ramen. Note: I've given measurements for small amounts of liquids in grams because it's more precise. Tantanmen is a delicious, spicy and nutty ramen dish topped with ground pork and pak choi. The broth has a rich sesame flavour and the meat is seasoned with Chinese chilli paste for an extra kick.

Instructions to make Tantanmen Ramen:
  1. To make the tare, mix all ingredients until well combined. Set aside.
  2. To cook the meat, heat the chili oil, and sauté the garlic and ginger for about 1 minute. Add the hoisin and oyster sauce and sauté for about 2 minutes. Add the meat and stir fry on high heat. Add a splash of wine and continue to saute the meat until there is no more moisture and the meat is cooked through. Set aside.
  3. To make the soup base, combine water, milk and chicken bouillon in a pot. Turn on heat and bring to a light simmer. Keep warm.
  4. To assemble, put about 2 tbsp of tare in the bottom of the bowl then then add the soup base. Add the ramen noodles and the toppings. Garnish with green spring onion onion and additional chili oil as desired.

Tantanmen is a delicious, spicy and nutty ramen dish topped with ground pork and pak choi. The broth has a rich sesame flavour and the meat is seasoned with Chinese chilli paste for an extra kick. Tsuyunashi Tantanmen (汁なし担々麺) is a quick and delicious spicy ramen dish. In my version, I toss my noodles in a spicy, nutty sesame sauce and top them with ground pork stir-fried with caramelized.
